Шарики форшмака одесского на потеху гурмановъ сготовленныя!

Форшмак разрывают на части сразу несколько национальных кухонь, претендуя на пальму первенства (как минимум — немецкая, шведская, финская, еврейская). Он становится полем для баталий, и окончательной ясности тут нет.

Кажется, нет сомнений только в этимологии: форшмак — это закуска; Vor schmack — буквально значит «перед вкусом», то есть «предвкушение». И подается он всегда в начале трапезы.

Некошерная отсебятина, с точки зрения одних и фантастическая закуска под водку, с точки зрения других.
В ресторане «Пушка» он представлен в осеннем меню, подается с хрустящими гренками из нашего бездрожжевого хлеба.
